Pork cheek is one of Seville's most traditional meat dishes, and that means it's pretty easy to find in tapas bars around town. Usually cooked in a simple wine reduction, some add carrots, cloves, and garlic to the mix.
A good carrillada should be extremely tender and full of flavour, and it's best accompanied by a large glass of red wine.
Torrijas
Something sweet had to make the list! Torrijas are generally made with stale bread that is soaked in beaten eggs before being deep fried. Later they are covered in sugar syrup, honey or sweetened milk. In Seville, they are eaten in pastry shops mainly around Semana Santa (Holy Week). However, many restaurants realize they make a fantastic dessert all year long's especially topped with ice cream!
Montadito de Pringá
Another of Seville's best sandwiches, this time including the glorious pringá stuffing -the leftovers of Seville's delicious puchero stew, all mashed up and perfectly combined. Versions vary but generally include chicken, blood sausage, and chorizo. Just order it!
